Monday - Pizza Casserole

*******1 can spag sauce
*******1 cup chopped mushrooms
*******1 cup chopped tomatoes
*******season w/garlic and sea salt
*******top w/pepperoni and cheese and bake in the oven
Tuesday - Cream Cheese Chicken Enchiladas w/seasoned corn and broccoli
*******2-8-oz cream cheese, softened
*******1 cup sour cream
*******2-10 ounce cans mild green chile enchilada sauce
*******1/4 cup jalapenos, chopped
*******1 pounds shredded chicken
*******8 oz black beans (dried, soaked overnight)
*******2 cups shredded sharp cheddar cheese
*******1 small sweet onion, chopped up farely fine
*******1/2 cup sliced black olives
*******12-14 corn tortillas
*******Garnish: sliced black olives, chopped tomato, shredded lettuce, chopped green onion.
Wednesday - kidney bean soup w/quesidillas
*******lb ground turkey 15 oz tom sauce
*******1 chopped onion

*******4 chopped potatoes
*******15 oz dried kidney beans
*******1 diced green pepper
*******beef base/chicken base to taste

Thursday - Beans and Rice
*******2 cups uncooked brown rice
*******16 oz dried black beans
*******1 large onion, chopped
*******1 tablespoon olive oil
*******1 1/2 cup diced tomatoes and green chilies
*******2 teaspoons chili powder
*******1/4 teaspoon salt
*******1 1/4 cups shredded Cheddar cheese
Friday - Homemade Hawaiian Pizza w/salad
Saturday - Farmer's Market Soup
*******2 chicken breasts cooked/cubed
*******1 cup barley
*******1 cup chopped carrots
*******1 cup chopped green zucchini
*******1 cup chopped yellow zucchini
*******1/2 cup chopped onion
*******1 cup chopped tomatoes
*******3 sticks chopped celery

*******1/2 cup frozen corn
*******1/2 cup fresh green beans

Sunday - Roasted Chicken, Mashed Potatoes w/steamed veggies
